The magnificent Borassus flabellifer (toddy palm, asian palmyra palm, sugar palm or Cambodian palm) is a very tall and distinctive palm on many a Thai garden or resort landscape.
Reaching dizzy heights of up to 30m, the Toddy Palm can live more than 100 years. Young species of the plant are slow growers, but as they mature their growth speeds up. The Toddy Palm bears a fruit sometimes referred to as the ice apple, similar to the lychee. In addition to the fruit, the sugary sap (referred to as toddy) can be fermented to make a drink known as arrack, a strong alcoholic golden coloured beverage.
